We opened The Dish Bistro in October 2006, taking over the space from Painted Bench, a Denver fixture for nearly 8 years. My goal in creating this restaurant was to create a friendly, neighborhood bistro with delicious food at reasonable prices. I believe in the idea of, and simply love, comfort food, but my comfort food sometimes includes Thai or sushi or something delicious that the French have been cooking in their small villages for centuries.
