Sushi Bistro opened 1999 by Chef/Owner Kaz Okochi to introduce his unique concept "Free Style Japanese Cuisine".
KAZ combines a relaxed restaurant atmosphere with modern Japanese influences.
Sushi and all other dishes are created based on high standard authentic Japanese cuisine and some addition of Western technique and ingredients.
Washington Post Food Writer Eve Zibart said that Kaz Okochi's "original small dishes" (or sometimes, "free-style Japanese" are) were among the very first in this area, and they're still among the best.
